This is a traditional Pad Thai recipe used by a friend. You can use chicken, beef, tofu, or a combination. You may want to start with less pepper, and work your way up, depending on how spicy you want it to be.

Maki is rolled into a tube and cut into circles. A hand roll is a whole piece of seaweed wrapped around the ingredients in the shape of a cone and left whole. It is not cut into smaller pieces
